Baguette Pan – You will need either a baguette pan (find it here) or make one yourself by using several layers of heavy foil to create a boat shape that is put onto a baking sheet. You need 2 boats and the length needs to be at least 12 inches long.

Directions

Follow the direction on the back of the box for the mix.  But instead of the amount of water listed on the box just use 1 cup of water to make the batter.  Line the Baguette pan or the diy pan with parchment paper.   Spoon and heap the bread batter along the length of each pan but do not go all the way to the edge in length.  Make sure you heap it up along the center.  Make 3 diagonal slits on each loaf.

Put a pan of water in the lower rack of the oven. Put the baking pan onto the middle rack of a cold oven.  Turn oven to 425 degrees and set timer for 25 minutes.  Then turn oven down to 375 degrees and gently drape foil on top of the bread and bak for another 25 minutes.  After baking turn out onto a cooling rack and let it sit for at least 2 hours before serving.  Gluten free breads have to set before serving or it will be gummy.

One 12 cup muffin pan

Parchment paper (cut into 12 pieces of 4 x 4 inches) Do not use cupcake liners

¼ cup plus 2 TBS of Almond milk or Coconut milk

Directions

Follow directions on the back of the box to make the batter except instead of the amount of water listed use 1 cup of water plus the amount of almond or coconut milk listed above.  Also instead of olive oil use 2 tsp of melted butter or ghee to substitute.  Line each muffin pan cup with parchment paper.  Use the botton of a glass to push the paper down into the cup.  Spoon the batter into the 12 slots about halfway up the sides with it heaping in the center. I like to make a little cross slit on top. Put the muffin pan onto the middle rack of a cold oven.  Turn the oven to 450 degrees and bake for 20 minutes.  Turn oven down to 350 and bake for another 25 minutes with foil draped over the top.  After baking turn out onto a cooling rack and let it sit for at least 2 hours before serving.  Gluten free breads have to set before serving or it will be gummy.
