These quesadillas are good any time of the day but they are really perfect for a hearty breakfast. Made with tortillas from our Nourishe Pizza Crust Mix they are also paleo friendly and gluten free.
4 Paleo tortillas (recipe here)
1/2 lb ground sausage
6 large eggs
1/4 cup chopped yellow onions
2 TBS chopped green onions
1/4 cup finely diced bell pepper
1/2 cup grated cheddar cheese
Add all the eggs to a bowl and season with salt & pepper to taste. Whisk eggs well. Break the sausage up and sauté in a how pan until cooked. Drain most of the fat from pan and add the vegetables. Saute for a few minutes and add the eggs. Scramble the egg and sausage mixture until eggs are set. Set aside to cool for a few minutes. Add a little bit of oil or butter to a flat pan over medium heat and lay 1 tortilla. Sprinkle a little cheeses on the tortilla. Spoon some of the egg and sausage mixture next and add a little cheese on top of that. Lay another Transfer to a plate. Make the second quesadillas the same way. Cut into wedges and serves 4.
