A Perfect Turkey Holiday

So you’re hosting the family this year for Thanksgiving.  Yikes, that means you’re responsible for roasting a tender juicy bird with golden brown crispy skin. Everyone will be expecting nothing short of that.  None of this bone dry pale turkey that usually happens to the best of cooks.  Not to worry; the recipe below, followed exactly, will produce a perfect roast turkey every single time.  Do not be afraid to crank that oven up to 525 degrees to start the roasting.  That’s the BIG secret to getting a juicy turkey with crispy skin.

The high temperature at the beginning caramelizes the skin and creates a protective case to retain moisture.  No need to continually baste which does nothing to retain moisture.  No need to use that bag thing; all that does is steam the turkey and hence produces pale non-crispy skin that’s dry.

Paleo Roast Turkey


Della’s Perfect Every Time Roast Turkey Recipe

1 TBS salt
1 tsp black pepper
1 tsp garlic powder
1 TBS dried sage
1 tsp dried thyme
Zest of 1 lemon
2 TBS coconut aminos
2 TBS light olive oil


Mix together in a bowl all the seasonings listed including the coconut aminos and the olive oil. Put turkey on a baking sheet. Rub seasoning mixture onto turkey on all sides and including inside the cavity. Marinate covered in the refrigerator for at least 12 hours, preferably 24 hours.

Preheat oven to 525 degrees and take turkey out of refrigerator and let stand covered for at least 30 minutes. Transfer turkey to a roasting pan with a rack. Put turkey into the 525 degree oven uncovered for approximately 15 – 20 minutes. Oven will smoke but unless you see the turkey burning do not open the oven. After this period turn oven down to 350 degrees and roast for another 20 minutes. At this point melt some butter (or use olive oil) and brush the turkey with the melted butter. Create a tent from foil and drape the foil loosely over the turkey. Make sure that you do not cover tightly. Roast until whatever the time is needed according the weight of the bird (approximately 15 minutes per pound, information is on the package label). Brush the turkey with pan drippings once. You may have to rotate the bird every so often if your oven has hot spots. I do it when I brush it with drippings. For the last 15 minutes take the foil tent off and roast until done. I check for doneness by pricking the thighs and the juices run clear.
